INGREDIENTS
6 tangerines
80ml milk
250g sugar
3 eggs
300g Plain flour
4 teaspoons baking powder
100ml vegetable oil
METHOD
Wash the tangerines, slice them up whole with the skins on and Remove any seeds.
Blend them in a food processor until they purée together. Add the sugar, oil and milk and keep blending.
Then add the eggs, flour and the baking powder.
Blend for a few minutes until you get a smooth batter.
Pour the batter into a greased 8” cake tin and bake at 180C for 45 minutes.
5. Dust with icing sugar to decorate.
