Ingredients

2 sweet potatoes

1/2 cup finely grated Parmesan Cheese

2 cups flour

1 egg

Method

Prick the potatoes and roast in the oven at 200c for 40 minutes or microwave for 10 minutes.

Mash the potatoes then add 1/2 cup of Parmesan cheese, 2 cup of flour and 1 egg and mix together.

turn out onto a floured surface and Knead for a couple of minutes to form a dough.
split the dough into 8 pieces and roll out into a long sausage about 1 inch diameter then slice into 1 inch chunks.
Roll each chunk on the edge of a fork to form the gnocchi shapes.

The gnocchi can be frozen at this stage for later.

Drop the gnocchi into boiling salted water for about 2 minutes until they float. Remove and drain on kitchen paper.

Serve with your favourite pasta sauce. It’s nice with a simple butter or olive oil sauce flavoured with sage or lemon tossed in a pan.
