I forgot the Spicy Onions with the Onion Bhajis.
First of all find a plastic container with a good lid. A take away container is idea… nothing you’re planning to use again.
1 or 2 large onion, rings, slices, chopped. I like a mixture.
In the container put a good glug of tomato ketchup.
1 teaspoon chilli powder, more if you feel brave.
1/2 teaspoon salt
1/2 teaspoon of dried mint or a teaspoon of mint jelly from a jar or 1 teaspoon of fenugreek leaves.
Splash of cider/white wine vinegar or lemon juice.
Put the lid on the container. Check that you’ve put the lid on the container correctly and do the shake, shake, shake.
Put in the fridge for 1/2 hour. Shake again before serving.
