INGREDIENTS
225g Plain Flour
2 level tsp baking powder
1/2 tsp ground mixed spice
100g butter
70g caster sugar
75g sultanas
1 egg
1 – 2 tbsp milk
2 tbsp Demerara sugar
INSTRUCTIONS
Preheat the oven to 180C. Line a baking tray with greaseproof paper.
Mix the flour, baking powder and mixed spice together in a large bowl. Rub in the butter until the breadcrumbs stage. Stir in the caster sugar and the sultanas.
Mix the egg and 1 tablespoon milk together and add to the mixture. Get your hand in and bring together until you have a fairly stiff dough. If the mixture is really dry and you still have lots of crumbs on the bottom of the bowl, add a little more milk.
Form rock shapes on the baking tray, using a fork, making sure they are spaced apart.
Sprinkle the tops with Demerara sugar and bake for 15-20 minutes or until golden brown.
Remove from the baking tray and transfer to a wire rack to cool.
