So I was catching up on a few missed episodes of Simply Raymond the other night. He was doing Miso and Harissa Roasted Aubergine. It was one of those “we could do that moments”. And John would get some extra Brownie points.

Of course we had just run out of Miso paste whatever that is and the Harissa jar was dated 2006….. so it’s Raymond’s Roasted Aubergine…… a la John.

Some curry sauce on the side from the freezer. ?

ingredients

1 Aubergine

1 teaspoon garlic paste

Topping:

1/2 onion, finely chopped

1 teaspoon curry paste

1 teaspoon ground cumin

1 teaspoon chilli paste

1/2 teaspoon paprika

1 tablespoon syrup/honey

1 tablespoon olive oil

1 tablespoon ketchup

Method

Cut 2 large slices from the aubergine, removing a slice of black outside edge from the base of each piece. Score the inside face of each slice with a knife and spread the garlic paste on top of each scored slice.

Fry off the chopped onion in a pan with some olive oil for a couple of minutes until soft, adding the curry paste.

Mix all of the toppings in a bowl with the fried onions into a paste.

Fry the 2 slices of aubergine, scored side down, in some olive oil. Allow the first side to take on colour for a couple of minutes before turning over in the pan. You may need a little more oil. Continue to fry until coloured and the aubergine has softened.
Transfer to a baking tray and spread the topping paste over the top of each slice. Grill for a couple of minutes until the topping bubbles and cooks through.
