I’m sure you will agree that unlike some baking recipes that have scientific measurements, Potato Scones are basically just a thrifty way of using up leftover potatoes.
So, Potatoes, Flour (about a fifth or quarter of the quantity of potatoes…… see how it goes) a knob of butter, some salt and pepper and bring it all together into a dough.
Roll out (1/4 inch/ 5mm…… no measuring tapes or micrometers required? and cut up into triangles…. or whatever shape you want). Fry in a lightly buttered/dry pan for a few minutes on each side until coloured.
