Ingredients
Biscuits:
560g plain flour
1 teaspoon baking powder
¼ teaspoon salt
200g granulated sugar
2 tablespoons orange zest
225g unsalted butter
2 tablespoons fresh orange juice
1 egg
Orange icing:
115g icing sugar
1 tablespoon orange zest
2 – 3 tablespoons of the Fresh orange juice
Method
Preheat oven to 180C and Line two baking trays with greaseproof paper.
Biscuits: In a bowl, whisk together the flour, baking powder and salt.
In another bowl, combine the the sugar and orange zest, rubbing until the zest is incorporated into the sugar.
Cream together the butter and the orange sugar with an electric whisk until light and fluffy, about 3 minutes. Add the egg and orange and mix until combined. Then gradually add the dry ingredients, mixing until just combined. If the dough seems soft put in the fridge to firm up.
Scoop out the dough and roll them into balls, placing them 2 inches apart on the baking tray. Bake for 10 to 12 minutes until very lightly browned around the edges. Let cool for 5 to 10 minutes on the baking tray, and then remove to a cooling rack to cool completely.
Make the Orange icing: Whisk together the Icing sugar, orange zest, and enough orange juice to get the right consistency Spread the icing over top of the cooled cookies, and allow to set for 30 minutes.
