“Old Fashioned” Macaroni Cheese

WARNING — This comes out solid like a flan. It’s not an Italian cheese sauce Mac Cheese….Like a Mamma used da make. It’s Macaroni Cheese …… like my Mammy used to make.

Ingredients

250-300g of Macaroni (Marshall short cut stuff) …. half a small bag.
2 eggs
1 Cup of milk
200-250g Scottish red cheddar cheese.

1/2 teaspoon of mustard

1 onion
1 tomato

A couple of handfuls of chopped mixed pepper….. optional

Method

Boil the pasta in salted water. 10 mins

Crack 2 eggs into an ashet dish/ovenproof bowl with the milk, mustard and whisk with a fork.
Slice 2/3 of the onion into rings for the topping. Fine chop the other 2/3 and add to the egg.
Grate the cheese and add to the egg. Keep back a couple of handfuls for the topping.

Drain and add the cooked macaroni to the dish and stir through.

Add the remaining cheese on top, then onion rings with sliced tomato.

Bake in the oven at 160c for about 30 minutes. Test with a knife that the mixture has “set” in the middle.

I sometimes add the chopped peppers in at the end of boiling the pasta. Not a very authentic Scottish Macaroni Cheese ingredients but it looks and tastes nice. I’m not sure my Mammy would have known what a pepper was or could be convinced to add them?.
