Microwave “Steamed” Jam/Syrup Sponge Pudding

Ingredients
4oz Butter, softened
4oz Caster sugar
4oz Self Raising Flour
2 eggs
1 teaspoon baking powder
Splash of milk
Method
If the butter has been in the fridge, zap it in the microwave for 20 seconds.
Cream the butter and sugar together until light and fluffy.
Then add the eggs one at a time and mix well. Next fold in the flour and baking powder until the mixture comes together adding a splash of milk.
Grease a microwave proof bowl, I used a 6” Pyrex with butter and add in your choice of jam/syrup/marmalade. About 3 tablespoons. I added Strawberry ham and a splash of syrup and mixed together.
Add the sponge mixture and spread out to the edge of the bowl.
Cover with greaseproof paper, making a fold in the paper for expansion and tie with a piece of string. This helps give the steamed pudding effect.
Microwave for 6 minutes on full power then leave in the bowl for 5 minutes before turning out into a plate.
Of course, you could do the same thing and actually steam the pudding over a pot of boiling water for a couple of hours.
