I’m under fear of death if I post my mothers Dumpling Recipe but I do have a microwave version.  Of course, it’s not got the Clootie Dumpling outside skin …. which is the best bit…… but it doesn’t take 3 hours of boiling.  


8oz plain flour

6oz sugar

Two eggs, beaten

1 heaped tablespoon mixed spice

1 heaped tablespoon cinnamon

1 teaspoon bicarbonate of soda

8oz butter

8oz sultanas

4oz currants

4oz raisins

1 tablespoon of treacle

1/2 pint water


Put the water, sugar, mixed spice, cinnamon, dried fruit, butter, and the treacle into a pot. Bring to the boil, and simmer for a couple of minutes. Remove from the heat and mix in the flour and bicarbonate of soda. Add 2 beaten eggs.

Pour the mixture into a microwave bowl which, lined with clingfilm to go well over the sides. Don’t cover the dumpling mixture with the clingfilm.

Cook in the microwave at full power for 8 minutes. Leave to set a bit in the bowl for 20 minutes before transfer to a plate.
