Meatballs without the Meat.

Ingredients

1 head of broccoli

2 cups breadcrumbs

4 spring onions, chopped

1 cup grated cheese

2 eggs
salt and pepper

1 teaspoon paprika

1/2 teaspoon curry powder

Method

Remove the florets from the broccoli and drop into salted boiling water for 3 or 4 minutes until cooked but not soft. Drain and plunge into cold running water. Drain and set aside while you grate and chop.

Rough chop the florets, then combine with the cheese, spring onions, breadcrumbs and spices. Then add the eggs and stir to combine.

Then form the mixture into balls put on a tray and put in the oven at 200C for 30 minutes, turning half way through.

I made a simple tomato sauce with a handful of chopped shallot in some olive oil then added a pack of passata, a cup of water, a spoonful of oregano and let it simmer while preparing the “meatballs”.

Served with spaghetti that I stirred some of the sauce through and the rest over the top.
