Meatballs in Tomato Sauce

500 g Minced Pork (or a mix of pork/beef….or beef)
1 small onion, finely chopped
Splash of tomato ketchup
1 chicken stock cube chopped
Salt and pepper
Flour for dusting
Sprinkle of paprika
Sprinkle of cumin
Simple tomato sauce:
1/2 onion, finely chopped
1 carton Passata
1/2 carton of water
1 teaspoon of oregano
Handful of fresh basil, chopped
Olive oil
Salt and pepper.
Method
For the sauce, sweat off the chopped onion in a glug of olive oil for a couple of minutes then add the passata, water, herbs, salt and pepper and simmer to reduce while you make the meatballs.
Mix all the meatball ingredients together in a bowl then form spoonfuls of the mix into balls and put on a plate. You should get about 24. Roll all the meatballs in flour.
Fry in a little oil on a low heat turning on all sides for about 10 minutes until browned. Sprinkle the paprika and cumin when the meatballs take on some colour.
Pour over the tomato sauce and continue to poach the meatballs on a low heat for another 10 minutes.
Serve with spaghetti.
