Another variation on Caramel Shortcake, again made using my shortbread tray recipe as a base. It can be found here. https://recipe.corriganonline.com/recipe/shortbread-aunt-catherine-style-forked/
Don’t fork the shortbread on top of you are using it for a tray base.
Caramel and Chocolate Topping
Same caramel and chocolate topping as in my Caramel Shortcake recipe. It can be found here. https://recipe.corriganonline.com/recipe/caramel-shortcake/
For the Malteser version you will need About 4 bags of Maltesers or one of their boxes. Enough to space them out in your caramel.
Make the Shortbread base and the caramel as above but no need to bake the caramel again in the oven.
Pour the caramel over the base and leave for 10 minutes then press the Maltesers into the Caramel spaced out as per the picture. Then make the chocolate topping as above and pour over the caramel and Maltesers.
You may need a little more than the standard amount of chocolate to cover the Maltesers, if you haven’t pressed them down enough.
Spread the chocolate topping into the corners and spread out to get a smooth top.
(Optional) break up some extra Maltesers and scatter over the topping.
Slice into squares with a sharp knife.
