Ingredients
150g unsalted butter, chopped
¼ cup golden syrup
½ teaspoon baking soda
1 cup plain flour
1 teaspoon ground ginger
1 cup caster sugar
1 cup desiccated coconut
¾ cup quick oats
Topping
150g milk cooking chocolate
2 teaspoons vegetable oil
Method
- Line an 18cm x 28cm rectangular tray with greaseproof paper.
- Put butter and syrup in a small and put on a low heat until butter is melted. Remove from the heat and stir in baking soda. The mixture will lighten.
- Add the flour and ginger into a large bowl along with sugar, coconut and oats and mix well. Make a well in the centre. Add the butter mixture and stir well until combined. Transfer the mixture To the lined tray and press into the base of the tray.
- Bake in a the oven at 160C for about 25 to 30 minutes until golden brown. Remove from the oven and allow to cool completely in the tray.
- To make the topping, combine chocolate and oil in a bowl and microwave in 20 second blasts until melted.
- Spread the chocolate topping all over the mixture and allow to set completely. Remove from the tray and cut into squares with a sharp knife.
