Ingredients

150g unsalted butter, chopped

¼ cup golden syrup 

½ teaspoon baking soda

1 cup plain flour

1 teaspoon ground ginger

1 cup caster sugar 

1 cup desiccated coconut

¾ cup quick oats 

Topping

150g milk cooking chocolate

2 teaspoons vegetable oil

Method

  1. Line an 18cm x 28cm rectangular tray with greaseproof paper.
  2. Put butter and syrup in a small and put on a low heat until butter is melted. Remove from the heat and stir in baking soda. The mixture will lighten.
  3. Add the flour and ginger into a large bowl along with sugar, coconut and oats and mix well. Make a well in the centre. Add the butter mixture and stir well until combined. Transfer the mixture To the lined tray and press into the base of the tray. 
  4. Bake in a the oven at 160C for about 25 to 30 minutes until golden brown. Remove from the oven and allow to cool completely in the tray.
  5. To make the topping, combine chocolate and oil in a bowl and microwave in 20 second blasts until melted.
  6. Spread the chocolate topping all over the mixture and allow to set completely. Remove from the tray and cut into squares with a sharp knife.
