100 g Butter

50 g Caster Sugar

50 g Soft Brown Sugar

200 g Syrup (in the mixture)

200 g Self Raising Flour

1 Egg

150 ml Milk

2 tbsp syrup (topping)


Heat your oven to 160°c and line a 2 pound loaf tin with greaseproof paper. 

Put the butter, 200g syrup and sugar into a pan and heat gently until the ingredients are just melted together, stirring occasionally. Set aside and allow to cool. 

whisk the milk and egg together. 

Add the flour to a large bowl then add the egg/milk along with the cooled syrup mixture and mix well until combined and smooth.

Transfer the mixture into your loaf tin.

Bake for around 1 hour until golden on top. 

Leave to cool for 10 minutes before poking the cake all over with a skewer and spreading 2 tablespoons of golden syrup over the top.

Allow to cool completely before serving.
