Chocolate Shortbread Cookies

Ingredients

10oz plain flour

1oz cocoa powder

8oz butter, soft

3 oz icing sugar

1/3 teaspoon vanilla extract

Optional 4oz/115g) dark chocolate, chopped 

Method 

In a small bowl, mix flour and cocoa powder together. 

In a separate bowl, cream butter and sugar together until smooth. 

Then add in the flour mixture, until just combined.

Roll the dough into a log about 2 inches diameter, wrap in cling film and put in the fridge for a couple of hours until firm. 

Preheat the oven to 165C and line 2 baking trays with greaseproof paper.

Cut the dough into 1/4” slices and place on the lined baking trays

Bake for 20 minutes. Remove and cool on a wire racks.

Optional.  The artistic bit. Once cooled, you can melt the chocolate in the microwave and drizzle over the shortbread.
