150g caster sugar

40g butter, unsalted

260g chocolate chunks

2 eggs

1 teaspoon vanilla essence

120g plain flour

1/2 teaspoon baking soda

1/2 teaspoon salt

40g chocolate chunks, for sprinkling on top

3 tablespoons of made coffee from a cup of coffee. You can drink the rest. 


Preheat the oven to 190c and line and 8” x 8” dish with greaseproof paper. 

In a pan, combine the sugar, butter, and coffee over a medium heat, stirring to melt, combine and come to the boil. 

Remove from heat and stir in the chocolate chunks until melted and smooth. 
Mix in the eggs and vanilla essence. 
Then add the flour, baking soda and salt. Mix until just combined. Be careful not to over mix. 

Pour the mixture into the prepared dish and sprinkle with the extra chocolate chunks. 

Bake 20-25 minutes. For softer brownies check and remove from the oven at the 20 minute mark.
