2 chicken breasts, sliced and fried off in a little oil.
3 tablespoons vegetable oil
1/2 medium onion, sliced
1/2 green pepper, sliced
1 teaspoon garlic paste
1 teaspoon ginger paste
1/4 teaspoon coriander powder
1/4 teaspoon cumin powder
1/4 teaspoon turmeric powder
1 teaspoon curry powder
2 teaspoons Kashmiri chilli powder
1/2 teaspoon sugar
1/2 teaspoon salt
1 tablespoon tomato pure (mixed with 2 tablespoons of water)
1/2 pint boiling water
1/2 tomato sliced into wedges
1/4 teaspoon garam masala powder
1 red/green chilli, sliced
Method
Heat the oil, once hot add the onion and pepper and cook on high for around 5 minutes until they are softened.
Add the garlic and ginger paste and fry for a couple of minute.
Add the coriander, cumin, turmeric, curry and chilli powders, sugar, salt and tomato puree. Stir well to fry the spices for a couple of minute.
Add 1/2 of the boiling water. Mix through and allow to fry for a couple of minute
Add the cooked chicken along with the rest of the boiling water. Stir through and fry for a further minute.
Add the rest of the boiled water and tomato wedges, stir through and continue to fry for a further couple of minutes and allow the sauce to thicken up.
Sprinkle with the garam masala and sliced chillies.
