So, a big of Old School lunch.

1/2 Roll of Shortcrust Pastry, rolled out to 3mm. 10” x 6” tin. Pricked and blind baked for 15 minutes at 180c.
1 onion, chopped and sliced, fried off in a little oil.
2 handfuls of grated cheddar cheese
4 eggs

Bake the pastry blind, add a layer of onions, the cheese and pour over the 4 eggs, lightly whisked.
Back in the oven at 170c for about 15 minutes until cooked through.
