Cheese and Onion Rolls

Same as the sausage rolls with a veggie filling.

Ingredients


1 roll of Just Roll puff pastry
3 potatoes.
1 onion chopped.
2 handfuls of grated cheese

1 teaspoon English mustard

1 egg

Tablespoon of chopped pickled jalapeños peppers or gherkins.
salt and pepper

Method

Peel and boil the potatoes and allow to cool. Sweat off the chopped onion in a little olive oil until soft and allow to cool.
Chop the potatoes up into 1 cm chunks and add to a mixing bowl add then onion, cheese, jalapeños, mustard, season with salt and pepper and mix well together. Whisk the egg with a fork and add most of it to the mixture and stir through. Keep some of the egg for egg washing the rolls.


Make 2 long sausages, the long length of the pastry and lay each about an inch from the edge of the pastry. Slice the pastry along the middle. Then fold the pastry around each sausage. Overlap on the bottom. Cut into about 2 inch chunks. I got 16.

Brush with a little beaten egg/milk. Bake at 200c for 25 minutes.

They will freeze well either cooked or uncooked.
