I’ve done a quick (Old School) Caramel Slice with a shop bought shortcrust pastry and a can of Creme De ale be/Caralel Sauce, it’s very popular….. The Google search bots have a really sweet tooth, they love it. It’s alway up at the top of the daily search hit totals. This is John’s way.
Ingredients
For this recipe you need a tray of John’s Shortbread for the base.

Shortbread Aunt Catherine style (forked)
Caramel:
2.5 oz unsalted butter, roughly chopped
2.5 oz brown sugar
1/2 tsp vanilla essence
1/2 a can (395g can) condensed milk
Chocolate sprinkles
Method
CARAMEL
Place butter, sugar and vanilla in a pan over medium low heat. When the butter is melted, whisk to combine with sugar, then just leave it until it comes to a simmer and begins to colour.
When bubbles appear, add condensed milk. Whisk constantly for 5 minutes
Once bubbles start appearing, whisk for 1 minute, then pour onto shortbread base. Tilt tray to spread evenly.
Leave to cool a bit for 5 minutes before scattering the chocolate sprinkles over the caramel.
