 So I seem to have ended up with 2 recipes for banana loaf. The first one below, I’m not sure where I got it, the second one that I’ve been making for ….. years, I’ve just added.

Ingredients
100 g (4 oz) softened butter
175 g (6 oz) caster sugar
2 large eggs
2 ripe bananas, mashed
225 g (8 oz) self-raising flour
1 level teaspoon baking powder
2 tablespoons milk
 
1 Pre-heat the oven to 160°C/Gas 4. Lightly grease a 2 lb loaf tin then line the base and sides with baking parchment.
2 Measure all the ingredients into a mixing bowl and beat for about 2 minutes, until well blended. Spoon the mixture into the prepared tin and level the surface.
3 Bake in the pre-heated oven for about 1 hour, until well risen and golden brown. A fine skewer inserted in the centre should come out clean. Leave to cool in the tin for a few minutes then turn out, peel off the parchment and finish cooling on a wire rack.

Version 2

ingredients

7oz plain flour

1 level teaspoon baking powder

1/2 level teaspoon baking soda

4oz caster sugar

2oz butter

1 egg

2 tablespoons milk

2 bananas mashed

(see spices below optional)

Method

Add the flour, baking powder, baking soda and sugar to a large bowl and mix together. Optional add 1/4 teaspoon of cinnamon and 1/4 teaspoon of mixed spice for a more spicy loaf). Rub in the butter until you get breadcrumbs. Add the mashed bananas to the mixture then whisk the egg and milk with a fork and add to the mixture and mix well.

Transfer the mixture to a greased 2 pound loaf tin and bake for an hour at 190c
