200 g butter salted
100g caster sugar
2 tbsp golden syrup
80g desiccated coconut
90g cornflakes, crushed
150g self raising flour
1.5 tbsp cocoa powder
1 teaspoon of vegetable oil
Pre-heat your oven to 180°C and line a 12 x 9 tray with grease proof paper.
Melt the butter, sugar and syrup in a large pan. Then combine the coconut, flour and cocoa and add into the wet mixture mixing well to combine. Then add in the cornflakes and mix again.
Transfer the mixture into the lined tray and spread out and press down into the corners.
Bake for around 25 minutes at 180c
Remove from the oven and allow to cool.
Melt the chocolate and oil in the microwave in 20 second blasts, stirring between each blast until melted and smooth. Don’t over heat. Pour the chocolate over the mixture and allow to spread to each corner, finish with the back of a spoon.
Put in the fridge for 20 minutes before cutting with a sharp knife.
