12oz Self raising flour
8oz Butter cut into pieces
6oz Sugar
4oz Sultanas
1lb Cooking apples (peeled & cut into chunky pieces).
3 Eggs beaten
3 tablespoons Milk
Preheat oven to 180c/Gas 4
Grease & line an 8-10 inch cake tin (or two loaf tins).
Rub fat into flour until resembles breadcrumbs. Add sugar, dried fruit & apples using a metal spoon to prevent fruit from sinking.
Fold in the eggs & milk, mix well but don’t beat.
Put into tin & bake for 45 minutes, test with skewer, if comes out dry it’s cooked, if not give 5 mins more & test again. Leave in tin to cool, keep in tin. Because of the apples this will only keep 5-7 days. Great cold but also yummy hot with custard or ice cream.
