Apple and Blueberry Crumble

6 tbsp caster sugar
2 Large Granny Smith apples, peeled, half grated, half cut into chunks
2 handfuls of fresh blueberries.
FOR THE CRUMBLE TOPPING
100g plain flour
2 tbsp demerara sugar
50g butter, chilled and cubed
4 tbsp nutty granola
- Preheat the oven to 200°C
- Add the caster sugar to a non-stick pan and heat for about 5 minutes until it caramelises. Add the grated apples and cook for 1–2 minutes. Stir in the apple chunks, then mix in the blueberries. Remove from the heat and set aside.
- To make the topping, place the flour, sugar, butter in a bowl and rub together until the mixture resembles breadcrumbs. Add the granola and mix until fully incorporated.
- Transfer the fruit mixture to an oven dish and scatter the crumble topping over the fruit then transfer to the preheated oven and bake for 12–14 minutes until the topping is a deep golden colour. Remove and serve warm.
